My family likes grilled cheese. Not obsessive about it or anything, but it's good stuff.

However, since we visited the Beacon Drive In, and had their grilled cheese, it was time to step up to a better version of this basic sandwich. You see, the Beacon makes theirs with pimento cheese.

I made the first batch of that stuff and it was like manna from heaven. This time around, I made seven pounds, enough to fill 3 takeout containers and the natives are happy. Well, they're happy if I make pimento grilled cheese a few times a week.

Who knew that mincing up a jar of roasted red peppers into two pounds of velveeta like substance would be such a game changer?
